March 17th 2020 Happy St Patrick’s Day!!

As most of you know I am part Irish like a percentage. This means that today I will be dinning on classics like corn beef and cabbage. Which is a Beef Brisket cooking in a pot covered in water and pickling spices added to the water. Later once that meat has started to get tender I will add some new potato’s, baby carrots, turnips, and cabbage to the pot and they will boil with the meat. The potato’s and carrots are my favorite part of the dish. Now, the corn beef can be served a bunch of different ways sliced thin by hand and served with the veggies or sliced even thinner using a slicer (a machine you see the deli meat cut on) to make a most wonderful sandwich called a Reuben. This sandwich is served on rye bread, with melted swiss cheese, thousand island dressing, and either sauerkraut, or coleslaw. The sauerkraut and coleslaw preference actually makes the sandwiches two different sandwiches but that is a story for another day. Have you ever had pastrami?
